SAKE FACTS
Sake is a 6800 year-old beverage that
is made from four main ingredients: rice, water, yeast, and koji
(a naturally occurring agent that converts starch to sugar, and imparts
a distinct and wonderful flavor).
An all natural, rice based, fermented
alcoholic beverage, Sake is essentially brewed like beer, but the end
product is served like wine.
Sake making implements have been discovered
in the Yangtze River Valley in China dating back to 4800 B.C.. The finest
Sake starts with the finest premium ingredients: the purest water, high
quality sake rice, special yeast and koji.
Sake rice is a brown short grain, almost
round rice. The starches in the rice, which provide the best flavors,
are concentrated in the center of the rice grain – the shinpaku, or
“white heart”.
For premium and super premium sakes,
the outside fo the grain, containing undesirable fat and proteins, is
polished away. “Ginjo” means that at least 40% of the outer
rice kernel is polished away prior to brewing, and “Daiginjo” indicates
that at least 50% is polished away.
The Nihonshu-do measures the dryness
of sake.
